Well I was doing really good until this weekend. We went to Biloxi Saturday night to a show and I had some vegetarian food at the show we went to (non-vegan, so it had lots of cheese) and a glass of wine… and two whiskey sours… and cookies in the hotel room… ugh. Scale shows 5+ pound weight gain, how is that even possible in just one day?! I know its probably not accurate but still. Went to the gym today and back on track starting right now!
I’m not sure why a guy thinks it ok to interrupt your workout on the elliptical to ask your name… No I’m not interested, I’m married, and even if I wasn’t I wouldn’t be into a guy who thinks it is cool to do push-ups in front of the cardio room and walk back and forth in front of the mirrors… Wth?
3 Ingredient Sweet Potato Burger
I’m not kidding. And they taste phenomenaul at about 160kcal a patty.
- Cut up 3 large sweet potatoes, then boil them until soft.
- While that’s cooking, mash up 4 cans of white beans with a fork, potato masher, or food processor.
- Once the potatoes are cooked, add them together with 2Tbsp crushed red pepper flakes and mash it all together.
- Form into patties, throw in the oven at 425* F until the edges start to crisp.
Getting healthier takes time and staying motivated can be a big hurdle so I hope some of these projects help! This should never feel like a punishment, getting fit should be something that makes you happy so fill your days with foods you love, fitness you enjoy and rewards that make you smile!
